Recipe and method :
1. In a mixing bowl, combine flour, golden syrup, alkaline water and vegetable oil. Stir the powder until it forms a smooth texture. Cover with plastic wrap and let sit for about 30 minutes.
2. While waiting for the dough to rest, prepare the filling of your choice. Divide the filling into equal portions according to your preferred mooncake size.
3. Once the dough has rested, divide it into smaller portions and shape into balls.
4. Dust your work surface with flour and use a rolling pin to flatten each piece of dough. Make sure the dough is large enough to wrap around the filling.
5. Place your chosen filling into the center of the dough and wrap it lightly, making sure there are no air bubbles inside.
6. Dust the mooncake mold with flour and tap off excess flour. Place the filled dough into the mold and press firmly to create the desired pattern.
7. Take the mooncake out of the mold and place it on a baking sheet lined with greaseproof paper. Repeat process with remaining dough and filling.
8. Preheat the oven to 180°C (350°F). Let the mooncakes dry for about 20 minutes, then brush them with a thin layer of water or egg yolk for gloss.
9. Bake the mooncakes for 20-25 minutes or until they turn golden brown.
10. Once the mooncakes are out of the oven, wait for them to cool and store them in an airtight container to maintain freshness.
